
The Oil Mill
In order to maintain unaltered the exceptional qualities of our virgin olive oil, we store it in stainless steel containers, undisturbed and in the dark, at a moderate temperature that is regulated by the most modern climate-control system available.
Museum
The museum is located in the former factory, right next to the new one. In this museum one can travel through time to admire oil-extraction methods of yore.
This museum represents an attempt to bear witness to a productive system that the rural populations along the banks of the Mediterranean used for more than a millennium. It explains the static and unchanging technological reality that existed until the beginning of the twentieth century, when the nascent mechanical industry gave birth to new opportunities. In effect, before these new technologies existed, man had to rely on his own strength - or that of animals - in order to extract oil from olives. The pieces that are exhibited - which are already extremely rare - represent the elemental technology that was transmitted from artisan to artisan and only occasionally modified by the inventiveness of a determined individual. On display in the museum are antique olive presses, a pug mill and a mixer, as well as other objects like oil clarifiers and sumps for collecting the olive waste products.
